🍞 Baking Tips for the Best Banana Nut Bread
- 🍌 Mash bananas well: Smoothly mashed bananas blend more evenly into the batter and prevent dense pockets in the loaf. A fork works perfectly. You don’t need a blender.
- 🌰 Toast the nuts first: Lightly toasting walnuts and pecans for 5–7 minutes enhances their flavor and keeps them crunchy after baking. Let them cool before folding into the batter.
- 🔥 Do not overmix the batter: Once the flour is added, stir just until combined. Overmixing can make the loaf dense instead of tender.

Banana Bread with Walnuts and Pecans
Equipment
Ingredients
- 2 cups all-purpose flour
- 0.90 cup granulated sugar
- 1 teaspoon baking soda
- 2 large ripe bananas
- 1 large egg
- 0.40 cup vegetable oil
- 0.25 cup milk
- ½ teaspoon vanilla extract
Instructions
- Preheat your oven to 350 degrees Fahrenheit and grease a 9-inch loaf pan with butter
- In a large mixing bowl, mash the bananas with a fork until no large pieces remain
- Add sugar, egg, oil, milk, and vanilla and mix until everything is incorporated
- Mix flour and baking soda into a bowl
- Add dry ingredients on top of the wet ingredients
- Once they’re combined, stir the dry ingredients into the wet ingredients with a spatula, carefully mixing the wet and the dry ingredients. Do not overmix
- Pour the batter into the prepared baking pan, smoothing out on top
- Bake the bread in the oven at 350℉ for about 45-55 minutes or until it is golden brown on top and a toothpick inserted into the center of the loaf comes out clean
- Let the banana bread cool in the pan for about 15 minutes
- Then take the loaf out of the pan to cool completely on a wire rack
- Slice and enjoy!
Notes
- Do not overmix. If you do, the bread loaf will be flat and dry
- When incorporating dry ingredients into the mixture, instead of stirring in a circle, scoop underneath the batter and pull up gently
- Line the baking pan with parchment paper if desired
