What is Ricotta Cheese?
It is an Italian whey cheese made from sheep, cow, goat, or Italian water buffalo milk whey left over from the production of other cheeses. However, modern ricotta is often made from milk instead of whey.

🍋Why This Recipe Works
- The pancake mix does most of the work. Trader Joe’s Lemon Ricotta Pancake Mix already provides the base flavors and dry ingredients, making these muffins quicker to prepare than traditional ricotta lemon muffins.
- Lemon leads without overpowering. The muffins have a noticeable lemon flavor with a milder ricotta note, creating a light and pleasant combination.
- It’s an easy alternative use for the mix. Instead of making another batch of pancakes, turn one seasonal Trader Joe’s product into muffins for breakfast, brunch, or afternoon snacking.

❓ FAQs about the easy Lemon Ricotta Muffins
Can I make muffins with Trader Joe’s Lemon Ricotta Pancake Mix?
Yes. Pancake mix can be adapted for muffins by changing the proportions of the wet ingredients. The batter should be thicker than pancake batter but still easy to scoop into the muffin pan.
Do these Lemon Ricotta Muffins taste strongly of ricotta?
No. The ricotta flavor is quite mild. Lemon is more noticeable, while the ricotta adds a subtle creamy flavor rather than making the muffins taste strongly of cheese.
How should I store Lemon Ricotta Muffins?
Let the muffins cool completely before storing them in an airtight container. Keep them at room temperature for about two days or refrigerate them for longer storage. Bring refrigerated muffins to room temperature or warm them briefly before serving for a softer texture.
