Equipment
- 8-inch round cake baking pan
Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon pure vanilla extract
- ½ cup packed light brown sugar
- 2 Pink Lady large apples Pink Lady
- 2 large eggs at room temperature
- ½ stick unsalted butter
- ½ stick salted butter
- ¼ cup calvados
- cooking spray for coating the pan
- powdered sugar for serving
Instructions
- Arrange a rack in the middle of the oven and heat the oven to 350ºF
- Coat an 8-inch round cake pan with cooking spray, then line the bottom with a parchment paper round
- Melt unsalted and salted butter. Peel, core, and dice apples
- In a medium bowl, whisk all-purpose flour and baking powder together
- Whisk eggs in a large bowl until they get frothy, with a light-yellow color
- Add the melted butter, salted and unsalted, brown sugar, calvados, and vanilla, and whisk to combine
- Add the flour mixture and stir with a spatula until blended. Add the apples and fold until just combined into the batter
- Transfer the batter to the prepared pan and smooth the top
- Bake until a toothpick inserted in the center comes out clean, about 50 minutes
- Let cool for 15 minutes before carefully removing it from pan
- Dust with powdered sugar and serve. You can also serve it with whipped cream
