🍑 Why This Recipe Works

  • Fresh peaches add natural sweetness. Ripe peaches become soft and juicy as they bake, keeping every slice moist and full of summer flavor.
  • Walnuts add crunch and balance. Their nutty flavor pairs beautifully with the sweet peaches while adding texture to every slice.
  • Easy enough for any home baker. No special equipment or complicated techniques are needed. Just mix, bake, and enjoy.
  • An easy make-ahead bake. The loaf keeps well for several days and tastes even better after the flavors have had time to develop.
  • Perfect any time of day. Serve it for breakfast, brunch, afternoon tea, or as a simple summer dessert.

❓ FAQs about the Fresh Peach Loaf Cake with Walnuts

What’s the easiest way to peel peaches?

Bring a pot of water to a boil and prepare a bowl of ice water. Cut a small “X” on the bottom of each peach and blanch them in boiling water for about 30 seconds. Transfer them immediately to the ice bath, then gently slip off the skins with your fingers or a small knife.

How should I cut the peaches?

Slice the peach in half, remove the pit, and cut the flesh into small, even cubes about ½ inch in size. I also like to cut them in short, small slices for a rustic feel. Smaller pieces distribute more evenly throughout the batter and help the loaf bake evenly.

Can I make the loaf cake ahead of time?

Yes! This loaf cake is a great make-ahead dessert. Bake it a day in advance, let it cool completely, and store it tightly wrapped at room temperature. The flavors become even better the next day.

How should I store the peach loaf cake?

Store the cooled loaf in an airtight container at room temperature for up to 2 days or refrigerate it for up to 5 days. Bring it to room temperature before serving for the best flavor and texture.

Can I freeze the loaf cake?

Absolutely. Wrap the completely cooled loaf or individual slices in plastic wrap followed by aluminum foil or a freezer-safe bag. Freeze for up to 3 months. Thaw overnight in the refrigerator or for a few hours at room temperature before serving.

Can I use frozen or canned peaches?

Fresh peaches give the best flavor and texture, but frozen peaches can also be used. Thaw and drain them well before adding them to the batter. If using canned peaches, drain them thoroughly and pat them dry with paper towels to remove excess moisture.

What can I serve with peach loaf cake?

This loaf cake is delicious on its own, but it’s also wonderful with a cup of coffee or tea. For dessert, serve a slice slightly warm with vanilla ice cream, whipped cream, or a dollop of lightly sweetened Greek yogurt.

Notes

  • Glaze is optional. I didn’t use glaze for this recipe as I like my loaf cakes bare with a nice crack!
