Wondering if Trader Joe’s Strawberry & Corn Flake Muffin & Loaf Cake Mix is worth picking up this summer? Here’s exactly how it bakes, tastes, and what to expect.

Trader Joe’s Strawberry & Corn Flake Muffin & Loaf Cake Mix is one of this summer’s limited-edition baking mixes, combining a strawberry cake batter with a buttery corn flake topping for a fun mix of soft and crunchy textures. It comes together with just a few pantry staples, making it an easy dessert or breakfast treat when you’re short on time.

After baking a full batch, I found this mix easy to prepare and beautifully textured. The muffins baked evenly with a crisp, buttery topping, although I personally preferred last year’s Strawberries & Cream Pancake Mix because it had a more natural strawberry flavor. If you’re curious about this year’s version before buying a box, here’s everything you need to know before you bake.

FOOD HISTORY

💡”Carl Smith, a sales executive at General Mills, got the idea of selling a pre-mixed blend of flour, salt, baking powder, and lard to create biscuits from a chef on a train in 1930. After Smith pitched the idea for a biscuit mix to sell, head chemist of General Mills, Charlie Kress, created Bisquick. Bisquick entered the market in 1931. In the 1940s, Bisquick began using “a world of baking in a box,” and printed recipes for other baked goods such as dumplings, muffins, and coffee cake” Source: Wikipedia

FAQs about this recipe

Can I make muffins instead of a loaf?

Yes! The mix is designed for either 12 standard muffins or one 8×4-inch loaf pan. Simply follow the baking times listed on the package.

What does the corn flake topping taste like?

The topping is buttery, lightly crunchy, and slightly salty, which balances some of the sweetness of the strawberry cake.

Is this mix very sweet?

Yes. Compared to last year’s Strawberries & Cream Pancake Mix, I found this version noticeably sweeter. If you enjoy sweeter bakery-style muffins, you’ll probably like it, but if you prefer a more pronounced strawberry flavor, the sweetness may stand out.

How can I store these muffins?

Yes, you can. Make sure muffins are completely cooled. You don’t want them still warm because they will get soggy. Once cooled, you can store them in an airtight container or even a bag that is zipped. They should last up to 3 days on your counter. They will last longer in the refrigerator, but they won’t be as moist and fresh.

Can I freeze these muffins?

Allow the muffins or loaf cake to cool completely. Wrap each muffin or individual loaf slices in plastic wrap, then place them in a freezer-safe bag or container. Freeze for up to 3 months.
To serve, thaw overnight in the refrigerator or at room temperature for about an hour. For the best texture, warm briefly in the microwave or oven.

My honest thoughts

  • ⭐⭐⭐⭐☆ Easy to prepare
  • ⭐⭐⭐⭐⭐ Great crunchy topping
  • ⭐⭐⭐☆☆ Strawberry flavor
  • ⭐⭐☆☆☆ Sweetness level (quite sweet)
  • Would I buy it again? Maybe once during the season, but I still prefer last year’s Strawberries & Cream Pancake Mix.
