Baker’s tips for better results

  1. We used water in this recipe instead of milk. It makes the muffins dairy-free and a bit lighter. I want the ube flavor to “shine through”, and it does, without the creaminess milk adds.
  2. You can use milk or any milk alternative for a non-dairy option
  3. We also used ube extract for extra color. Ube extract is a concentrated flavoring made from purple yam, giving foods a sweet, nutty, vanilla-meets-pistachio flavor and a bold purple color. It’s an easy way to add ube’s signature taste and hue to baked goods and desserts without changing the texture.
  4. We didn’t add any sugar as the mix is sweet enough.
  5. This recipe is gluten-free and dairy-free without the milk addition.
  6. We didn’t add any mix-ins, but you can do: Add shredded coconut for extra chew and tropical vibes. Or shredded cheese for a sweet-savory twist!
